Making gelatin from chicken bones extract

Hi if i cook some chicken bones for 4 hours will there be any gelatin in the water without me having to refrigerate it?





Hello Dave,
No need to go four hours, one hour is plenty and perhaps a second extraction with fresh boiling water for a shorter period.

The bouillon formed won't actually solidify into a gel unless you cool it. But the gelatin is there in solution.
