APPLE SALAD RECIPE

INGREDIENTS

Go wild when making APPLE SALAD RECIPE! Give vent to your imagination!

* 2 coarsely chopped apples, one red, one yellow.

* 1 1/4 cups chopped celery.

* Half a cup of tiny broccoli florets.

* Chicken squares.

* 1/2 cup coarsely chopped walnuts (or other nuts).

* 1 TBSP mayonnaise.

* raisins, pumpkin and sunflower seeds, handful of bean sprouts

* dash allspice.

* 1 teaspoon lemon juice, diluted with water.



PREPARATION

Make a bed of salad greens, place chopped apple, celery and walnuts in a bowl. Combine mayonnaise (or olive oil), allspice and lemon juice and water. Toss mayonnaise mixture with apple mixture. Add chicken squares.

SIDE DISH OF BRIGHT SALADS

Toss a mixture of chopped tomato, paprika (sweet peppers, red and yellow), shallots and radishes. Sprinkle a TBSP of chopped young Sweet Basil leaves over the salad, or rustle up some home-made Pesto, easy and add a handful of olives, and perhaps some chopped Feta cheese squares. Dribble with olive oil and Balsamic vinegar. Few drops of water if you like it moist. I do. Yum!

To really finish off your lunch, mop up the juice with some bread (and a little butter if your cholesterol is okay), perhaps spread with Tahini, my favourite on bread.
